Some words from Grower Jim

Hello! My name is Jim Ford, and I am a long-time producer of fresh, naturally-grown fruit, potted herbs, vegetable plants and edible landscape plants. Everything I sell is locally grown in Apopka, where I have been cultivating the same plot of land for 25 years.

I define naturally-grown as being grown without any artificial or manufactured products (Beyond Organic). “Certified Organic” growers are allowed to use bacteria, toxic alkaloids, and other man-made compounds on their crops as long as they are derived from plant or animal sources. I do not use these products. If a plant can’t be grown without the use of chemicals, I don’t grow it. For weed control I rely on labor-intensive hand pulling, mulch suppression and weed fabric/ground cloth.

My fruit grove is naturally watered only with rainfall, and the lack of irrigation concentrates and enhances the flavor of my fruit.
My fresh vegetables and herbs are all grown outdoors in the ground in natural sun, wind and rain. As a result, they may not always be picture-perfect, but the flavor and nutrition levels can’t be beat.
My potted plants are grown in a compost/soil blend made from materials composted on site, and watered with rainfall and ground water from a well. I don’t use any synthetic fertilizers, instead relying on the nutrients inherent in the compost/soil mix and bio-active pond water rich with fish waste and algae. All containerized plants are grown in 100% re-used post-consumer pots.

"Living Towers is home to a 2,200 square foot, state-of-the- art greenhouse that produces “beyond organic” lettuces, herbs, and vegetables. We are open from 10am – 6pm, Tuesdays and Thursdays. The produce we grow and a variety of seedlings (see www.livingtowerseedlings.com for details) are always available. Group tours are also available outside of these hours. Please contact us for more information or to book a tour.

Living Towers was established in October 2010 by Dr Jan Young ND. Jan’s small idea soon became a large project, as more and more families became aware of the importance of locally grown foods and knowing the source of those foods. The business is now run by Jan, her son Jason and her daughter-in-law Dee. In October 2012, just two years after Living Towers opened, construction began on the second greenhouse.

Living Towers is also a prototype of the future in community and family food production and consumption. Our food is produced “Clean and Green” using rainwater collection and solar energy, creating the smallest possible ecological footprint. Here we grow over 5000 plants in a 2,200 square foot greenhouse. Grow these crops on the ground and you would use between a third and half an acre!

We use a water based growing system (Hydroponic) that creates its own highly oxygenated environment (Aeroponic) for the plant roots. Our plants are grown vertically, using the latest “Tower Garden” (link to Tower Garden Page) technology and a proprietary Tower Tonic plant food. Our wide range of ionic earth based minerals and plant nutrients allow us to grow strong, healthy, nutrient dense produce essential to vibrant human health.

At Living Towers, we blend Nature with Technology, producing foods that “Nourish the Human Body and Spirit”.

We service our local community by selling produce direct from our farm, along with supplying organic co-ops and food banks. Our goals include promoting buying local organic food, as well as the sustainable living movement. We accomplish this by teaching family growing, community gardening, and commercial production through tours and seminars. Eating good quality food doesn’t have to cost the earth, nor have a negative impact on the earth.

Sunchowder’s Emporia is based in Longwood, Florida. All of our jams and fruit butters are processed in small batches, never using corn syrup, pectin, preservatives or colors. These fruit and vegetable jams take longer to process than many store-bought jams as commercial pectin is not added to form the gel. All the fruits and vegetables are cut and processed by hand using only fresh, quality ingredients, locally sourced whenever possible. She uses French methods of jam making, such as allowing fruit to macerate overnight to coaxe out the luscious flavors of berries, stone fruits and vegetables. The preseves have a pure, smooth texture and are deliciously different from the average jam. It is the hopr that Sunchowder’s Emporia jams, spreads, chutneys and pickles will become pantry staples and wonderful time savers in your kitchen as they make fabulous glazes, dips and appetizers for mealtimes. They can be added to quick breads and cookies for unique baked goods.

CRACKERMAN CRACKERS are all organic made with golden and brown flaxseed and organic sesame seed. Traditional bread spices such as cumin, fennel and coriander and extra virgin olive oil guarantee a great tasting product. The crackers contain a low percentage of whole wheat and unbromated, unbleached flour. Due to their carefully selected ingredients they have many nutritional benefits. We do care about our products, one reason we use whole spices and grind them just before baking. This goes for both the breads and crackers.

Organic Flours:
We use unbleached, unbromated flours because we would prefer to give you unadulterated food. Our wheat is shipped from a small family owned mill in Montana, because the soils up there are ideal for an exceptionally flavorful, nutrient rich wheat berry. The fact that our flours are stoneground, a low temperature grinding process, means more pro minerals and aroma in your bread as opposed the vast majority of mills which have their cylinders grinding at 350-400 degrees Fahrenheit.

Organic Seeds:
The seeds we use for our Fraulein’s Harvest bread are from certified Organic purveyors.
They are golden and brown flax, pumpkin, sunflower and sesame seeds. we soak and sprout them over night for several reasons: Flavors and nutrients are being released, the bread remains moist over a long time plus the seeds will be better processed by your body. These ingredients plus the whole wheat in our bread provide you with complex carbs, a diversity of fiber and great multilayered taste.

Organic Spices:
More than a dozen bread spices are widely used for breads in Central Europe. This comes for a reason: spices like caraway, fennel seeds and cumin are used for better digestion, while others like cloves, coriander or mace are complementing the type of bread, be it rye, wheat or dried fruit bread. We use classical German bread spices for our loaves and grind them just before baking. If you grind your own spices and inhale the fresh scent you will know why.

Roasted Beets with Balsamic Glaze Recipe

Ingredients

2 pounds beets, medium sized, scrubbed clean,
green tops removed

Olive oil

Sea Salt

1/2 cup balsamic vinegar

2 teaspoons sugar

1 teaspoon grated orange zest

Freshly ground black pepper

Directions:

Preheat oven to 400°F. Line a roasting pan with aluminum foil. Place the beets in the pan. Rub olive oil over the beets, and sprinkle with salt. Cover the beets with another sheet of aluminum foil. Roast for 1 to 2 hours, depending on the size of the beets and how old they are. After 1 hour, test every fifteen minutes by poking a beet with the tines of a fork. Once the fork tines go in easily, the beets are tender and cooked. Remove from the oven.

“We’ve been growing our gardens here at Sundew Gardens since 1983. Starting in the mid 1980’s, we’ve been marketing our produce through several “Community Market Gardening” sources. Sundew Gardens was certified organic in the 1990’s, and although no longer certified, we continue to use natural and practical non-synthetic soil improvements and pest controls. All of our produce is grown in real soil, improved with natural mineral, ocean borne, and compost fertilizers (no hydroponic salts). The soil only get better over time since we use only sustainable, natural methods. We grow a wide selection of vegetables, herbs, citrus, blueberries, and chickens for eggs. Aquaponic Lynx LLC started out as a business to supply aquaponics systems and equipment but the backyard systems are producing more than we can eat ourselves.

Either by helping people grow food in their own back yards or providing some food for the local market we want to be involved in local food.

Aquaponics has to be free of toxic chemicals since they would kill the fish and bio-filter that run the system and I hate to have dangerous substances around the house so even in the soil gardens I don’t use any pesticides and I try to keep pests in check by growing mixed crops and moving things around all the time since I’m unwilling to spend much time spraying even “safe” things.

Current surplus is lufa which are a great crop for our long hot Florida summers.

“We have a small homestead farm here in Orlando growing citrus and veggies, plus we raise our “Happy Chickens”! We call them happy because they are just the loveliest ladies, who just look quaint scratching around in our field. We also have a beautiful horse, two dairy goats, a sometimes crazy goat, and our pets. We feel we have a slice of heaven in the middle of Orlando.

Our chickens are free range and healthy. They help us manage pest by ranging around our property eating bugs. They also eat veggie kitchen scraps and occasionally spoiled veggies from the Co-op.

We practice organic, using fertilizer our farm produces, horse & chickens manure and compost.

We do not use synthetic pesticides and herbicides at our farm. The horse and goat mow the grass down, and then we’ll hand pull weeds they leave behind.

To manage insect pests we use Diatomaceous Earth where needed, but our bug hungry chickens do most of the work for us.

Water for the veggies and animals comes from our well and rainwater catchment."

Jalapeno Potato Soup

Ingredients:

-1/2 medium onion, chopped

-1/8 c. butter

-2.5 pounds potatoes of your choice, peeled and cubed

-4 c. veggie broth

-1/2 t. ground cumin
-1/4 cup jalapenos, coarsely chopped

-2 cups coconut milk

-Everything but Salt to taste by Orenda Herbal

-Salt and pepper to taste

-Green onions or chives, chopped

Directions:

In a large stockpot, sauté onion and peppers in butter until just tender. Add potatoes, broth, cumin, and Everything but Salt. Cover and cook until potatoes are tender (20-30 minutes).

Remove from heat and stir in coconut milk.

Coarsely mash potatoes in the pot with potato masher. Stir well, then season with salt and pepper. Return to heat and simmer for 15 minutes, stirring frequently.

Garnish individual servings with a sprinkling of chopped green onions or chives.

Some like it hot and some don’t. To adjust for hotness level don’t forget to remove the membranes and seeds from the peppers to match your comfort level.

Chuck Gomez, the owner and of Pure Produce has spent most of his working life in Florida, he was born and raised in New England. He worked in programs in oceanography in Maine accelerating in biology and chemistry subjects, having attended the University of Pennsylvania college.

Here he studied Oceanography. He transferred to the University of Miami, where he also worked at the Marine Institute in Key Biscayne. He met Mayta, his devoted wife and business partner when they began their life-long journey together creating a beautiful family and investing a 2.5 acre property for the future hydroponic farm.

They have supplied the military with produce until 2006. Now we supply Orlando and West Palm beach Hotels restaurants and Resorts and natural food markets.
