“We have a small homestead farm here in Orlando growing citrus and veggies, plus we raise our “Happy Chickens”! We call them happy because they are just the loveliest ladies, who just look quaint scratching around in our field. We also have a beautiful horse, two dairy goats, a sometimes crazy goat, and our pets. We feel we have a slice of heaven in the middle of Orlando.

Our chickens are free range and healthy. They help us manage pest by ranging around our property eating bugs. They also eat veggie kitchen scraps and occasionally spoiled veggies from the Co-op.

We practice organic, using fertilizer our farm produces, horse & chickens manure and compost.

We do not use synthetic pesticides and herbicides at our farm. The horse and goat mow the grass down, and then we’ll hand pull weeds they leave behind.

To manage insect pests we use Diatomaceous Earth where needed, but our bug hungry chickens do most of the work for us.

Water for the veggies and animals comes from our well and rainwater catchment."

Jalapeno Potato Soup

Ingredients:

-1/2 medium onion, chopped

-1/8 c. butter

-2.5 pounds potatoes of your choice, peeled and cubed

-4 c. veggie broth

-1/2 t. ground cumin
-1/4 cup jalapenos, coarsely chopped

-2 cups coconut milk

-Everything but Salt to taste by Orenda Herbal

-Salt and pepper to taste

-Green onions or chives, chopped

Directions:

In a large stockpot, sauté onion and peppers in butter until just tender. Add potatoes, broth, cumin, and Everything but Salt. Cover and cook until potatoes are tender (20-30 minutes).

Remove from heat and stir in coconut milk.

Coarsely mash potatoes in the pot with potato masher. Stir well, then season with salt and pepper. Return to heat and simmer for 15 minutes, stirring frequently.

Garnish individual servings with a sprinkling of chopped green onions or chives.

Some like it hot and some don’t. To adjust for hotness level don’t forget to remove the membranes and seeds from the peppers to match your comfort level.
