Catnip is also known as catmint, catswort, and field balm. It is a member of the mint family of herbs and is now to be found in the milder climates of the Northern Hemisphere.
Catnip contains a substance called nepetalactone and essential oils. Nepetalactone has a sedative effect in humans. It also can be anti-bacterial, anti-fungal and muscle-relaxing. The essence of the catnip herbs can be extracted through catnip
tea, which is produced by steeping the aerial parts of the catnip for about 10 minutes in hot water which has been boiled and then removed. Catnip Tea can be consumed 2 to 3 times per day. Expectant mothers are advised to avoid drinking catnip tea.

A favorite herb that grows as the green leaves of the coriander plant that resemble a parsley-like green plant. Cilantro has a sharp distinctive flavor with a peppery taste that is very popular in Mexican and Asian food dishes. It is so popular in China that it is often referred to as Chinese parsley. Cilantro must be prepared as a fresh green because it loses its flavor when it is dried. It is best to add it to cooked dishes at the very end of the cooking process since the heat from cooking will cause the leaves to rapidly lose their flavor. Cilantro goes well with soups containing poultry or beans (especially lentils), with many Mexican and Asian food dishes, with tomatoes, spinach, egg dishes, and salsas.
This herb can be kept fresh for a few days after harvesting by wrapping the leaves in damp paper towels covered with plastic wrap and placed in the refrigerator. It is a common seasoning in a variety of Mexican foods such as fish or salsa. Cilantro may be referred to as coriander, but coriander is actually the entire plant including the roots, leaves, and seeds. As the cilantro plant grows beyond the leaf greens it goes to seed, forming small fruits that are dried to become the coriander seeds for use as a popular seasoning.

The feathery leaves are the part of this vegetable that can be used as an herb or as a garnish. The actual fennel herb is slightly different as it does not have a bulb and is used primarly to produce fennel seeds that are used as a seasoning in a variety of foods. When selecting, choose bulbs that have a good white and green coloring without brown or rust spots. For storage, wrap in plastic and refrigerate for up to a week.

A strong, aromatic herb which is used fresh or dried, commonly in combination with onions and garlic to season meat (beef, lamb, pork, and veal), poultry, fish, eggs, and vegetables (asparagus, broccoli, carrots, mushrooms, peas, and potatoes). Marjoram provides a sweet and somewhat mint-like flavor with a hint of oregano. To obtain the best flavor, the Marjoram should be picked before the flower buds open on this herb. Fresh Marjoram keeps fatty foods from rapidly developing an unpleasant taste or smell, but if the Marjoram is old it limits the effectiveness for enhancing the flavors and aroma.
To chop fresh Marjoram, hold the stems and gather leaves into a tight, dense bunch. Using a sharp knife, cut across the gathered bunch to chop coarsely. When all the leaves have been chopped, discard the stems. To mince, take coarsely chopped leaves, with a rocking motion start moving a sharp knife blade back and forth across the leaves until they have been cut to the desired cut and size.

To chop or mince fresh mint, remove the leaves from the stems and gather leaves into a tight, compact bunch. Using a sharp knife, cut across the bunch with a rocking motion until desired coarseness is achieved. To snip fresh mint, place leaves in a glass measuring cup and snip with a scissors until desired coarseness is achieved.
