Mitsuba can be added to mixed green salads, parboiled and served as a vegetable, or stir-fried alone or with other vegetables or meat. Add it to soups, custards, rice, and pickled foods. It can be boiled and used as a sushi wrap, boiled and marinated in soy sauce to make a dressing, and used in nabe (a Japanese stew). It is also used in miso soup. Eat Mitsuba raw or cook it only lightly, or add it to cooked dishes just before serving. Japanese chefs often use the leaves as an elegant garnish.
